Blueberry Spinach Salad

Blueberry Spinach Salad

Beautiful and flavorful, this salad features the colorful ingredients and complementary flavors of crisp, green spinach, blueberry dressing, blueberries and blue cheese.

Ingredients

  • 3 cups fresh blueberries, divided
  • 1 cup vegetable oil
  • 1/3 cup raspberry- flavored vinegar
  • 3 tablespoons sugar
  • 1 shallot, minced
  • 1 teaspoon salt
  • 1 teaspoon salt
  • 2 bunches spinach, trimmed and torn
  • 2/3 cup crumbled blue cheese
  • 1/2 cup chopped pecans, toasted

Directions

  1. Combine 2 cups blueberries, vegetable oil, vinegar, sugar, shallot and salt in a blender. Process until blended.

  2. Combine spinach, remaining blueberries, blue cheese and pecans in a large salad bowl and toss to mix.

  3. Pour the blueberry vinaigrette over spinach mixture just before serving. Toss to mix well.

Secret Tip

Bagged, washed spinach is the easy choice for this recipe, but in the spring, look for homegrown spinach for extra nutrition and a tender texture. Rinse the spinach with water to remove any dirt, then lift out and pat dry.
