Chicken Caesar Salad
Crisp greens and crunchy croutons are a satisfying salad; adding warm grilled chicken slices makes it a hearty meal.
Prep Time:
Cooking Time: 45 minutes
Ingredients
- 4 boneless, skinless chicken-breast halves (about 6 ounces each)
- 1/2 cup Caesar salad dressing, divided
- 1 (16-ounce) package romaine lettuce
- 1/2 cup seasoned croutons
- 2 tablespoons shredded Parmesan cheese
- 1/2 teaspoon black pepper, optional
Directions
Preheat grill to medium. Place grill rack 10 inches from heat.
Arrange chicken on grill. Reserve half the salad dressing for the salad.
Grill the chicken, turning and brushing with remaining salad dressing, until juices run clear, about 10 minutes.
Cut chicken into slices. Break romaine into bite-size pieces.
Combine romaine, chicken, croutons, Parmesan and reserved salad dressing in a salad bowl and toss to mix. Sprinkle with black pepper, if desired.
Secret Tip
Save a little money by buying a whole head of romaine lettuce and using a salad spinner to quickly wash and dry the leaves. Lettuce that is washed, spun and stored in a spinner stays fresh and crisp for several days.
