Fennel & Orange Salad

Fennel & Orange Salad

Bright citrus and the delicate licorice flavor of fennel make this a wonderful winter salad.

Ingredients

  • 2/3 cup vegetable oil
  • 1/3 cup red-wine vinegar
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 2 medium Florence fennel
  • 4 medium oranges
  • 1 cup chopped celery
  • 1/2 cup chopped walnuts
  • Lettuce leaves

Directions

  1. Combine vegetable oil, vinegar, sugar, salt and white pepper in a small bowl and mix well.

  2. Cut fennel bulbs into thin slices, chopping and reserving fennel leaves. Peel oranges and separate into segments.

  3. Combine sliced fennel, oranges, celery and walnuts in a large bowl.

  4. Pour vegetable oil mixture over fennel mixture and toss to coat. Arrange lettuce in salad bowls. Spoon salad on top of lettuce. Sprinkle with reserved fennel leaves. Serve immediately.

Secret Tip

The fennel bulb will likely have a short length of stalk. The stalks have the same licorice flavor but a different texture than the bulb. Chop the stalks along with the bulb for the salad.
