Marinated Vegetable Salad
Fresh vegetables picked at perfect ripeness just need a bit? of dressing to bring them to the peak of flavor.

Ingredients
- 8 ounces fresh green beans, trimmed
- 2 medium tomatoes, chopped
- 1 cup sliced fresh mushrooms
- 1/2 medium red onion, chopped
- 1/2 small cucumber, chopped
- 4 celery stalks, chopped
- 1/4 cup chopped green olives
- 1/4 cup olive oil
- 1 1/2 tablespoons red-wine vinegar
- Lettuce leaves
Directions
Combine green beans and enough water to cover in a large saucepan. Bring to a boil. Cook for 3 minutes; drain. Cut into thirds.
Combine green beans, tomatoes, mushrooms, red onion, cucumber, celery and green olives in a large bowl and mix well.
Combine olive oil and vinegar in a small bowl and mix well. Season with salt and black pepper.
Pour olive oil mixture over green bean mixture and toss to mix well. Line 4 salad bowls with lettuce leaves. Spoon salad into prepared bowls. Serve immediately.
Secret Tip
Cut up the green beans while you wait for the water to boil. Here's a quick way. Arrange a handful of green beans with the stems all at the same level, then slice off all the stems at once with a large knife. Now slice the beans into thirds. Repeat with remaining beans.
