Parmesan Pepper Dressing

Parmesan Pepper Dressing

Commercial salad dressing can’t compete with the freshness ?and intense flavor of this homemade version.

Servings: makes 7 tablespoons
Prep Time: 4 minutes start to finish

Ingredients

  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon black pepper
  • 1/4 cup vegetable oil
  • 1/4 cup vegetable oil
  • 2 tablespoons shredded Parmesan cheese
  • 1 tablespoon lemon juice

Directions

  1. Combine garlic, salt, dry mustard and black pepper in a small bowl and mash with a fork until of a paste consistency.

  2. Whisk in vegetable oil, Parmesan and lemon juice. Pour into a cruet.

  3. Chill until serving time. Refrigerate any leftovers.

Secret Tip

If you have a mortar and pestle, this is the time to use it. Mashing the ­ garlic, salt, dry ­mustard and black ­pepper is a snap with this old-fashioned ­cooking tool.
