Parmesan Pepper Dressing
Commercial salad dressing can’t compete with the freshness ?and intense flavor of this homemade version.
Servings: makes 7 tablespoons

Ingredients
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon dry mustard
- 1/4 teaspoon black pepper
- 1/4 cup vegetable oil
- 1/4 cup vegetable oil
- 2 tablespoons shredded Parmesan cheese
- 1 tablespoon lemon juice
Directions
Combine garlic, salt, dry mustard and black pepper in a small bowl and mash with a fork until of a paste consistency.
Whisk in vegetable oil, Parmesan and lemon juice. Pour into a cruet.
Chill until serving time. Refrigerate any leftovers.
Secret Tip
If you have a mortar and pestle, this is the time to use it. Mashing the garlic, salt, dry mustard and black pepper is a snap with this old-fashioned cooking tool.
