Sweet Potato Salad
This island-influenced combination of ingredients makes an unusual and tasty salad.

Ingredients
- 8 ounces bacon
- 1 (40-ounce) can sweet potatoes, drained and chopped
- 1/2 cup golden raisins
- 1/2 cup mayonnaise
- 2 tablespoons lime juice
- 1 tablespoon Dijon-style mustard
- 1/2 teaspoon black pepper
- 1/2 cup chopped macadamia nuts
Directions
Cook bacon in a large skillet over medium-high heat until crisp; drain. Crumble the bacon.
Combine sweet potatoes, raisins and bacon in a large bowl and mix well.
Combine mayonnaise, lime juice, mustard and black pepper in a small bowl. Add to sweet potato mixture and mix well.
Spoon salad into a serving dish. Sprinkle with macadamia nuts. Serve immediately.
Secret Tip
The bright colors and unusual flavor pairings of this salad will go well with mild or bland foods, such as fettuccine alfredo and grilled pork, or with intensely flavorful foods, such as marinated chicken and steak with salsa.
