Tomato & Avocado Salad
When avocados are buttery ripe and tomatoes are juicy and flavorful, the combination shines in this salad. It’s a treat for family and special enough for guests.

Ingredients
- 2 large avocados, coarsely chopped
- 2 medium tomatoes, chopped
- 1/2 small red onion, sliced
- 6 slices bacon, crisp-cooked and crumbled
- 1/3 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon hot pepper sauce
- 4 lettuce leaves
Directions
Toss avocados, tomatoes, onion and bacon in a large bowl.
Whisk olive oil, vinegar, salt, black pepper and hot pepper sauce in a small bowl until blended.
Drizzle olive oil mixture over avocado mixture and toss gently. Place a lettuce leaf on each of 4 individual salad plates. Top with equal portions of avocado mixture and serve.
Secret Tip
If you crave avocados but can't find ripe ones at the supermarket, try this: Purchase underripe avocados, then place them in a paper bag with an apple and twist the top shut. Apples produce a harmless gas that speeds ripening. Leave for 2 days, then check the avocados for ripeness.
