Tomatoes & Basil Dressing

Celebrate the long, wonderful days of summer with a special salad of vine-ripe tomatoes topped with a fragrant dressing of basil and shallots.

Ingredients

  • 2 large shallots, finely chopped
  • 1/2 cup finely chopped fresh basil
  • 5 tablespoons extra virgin olive oil
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons sesame oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon salt
  • 1/8 teaspoon white pepper
  • 4 large leaves green leaf lettuce
  • 4 medium tomatoes, sliced

Directions

  1. Combine shallots, basil, olive oil, vinegar, sesame oil, salt and white pepper in a jar with a tight-fitting lid. Shake to mix.

  2. Let dressing stand for 10 minutes. Shake again.

  3. Line each of 4 salad plates with a lettuce leaf. Arrange equal portions of tomato slices on each plate.

  4. Drizzle basil dressing over the salads. Serve immediately.

  5. variation For a milder flavor that lets the basil taste come through, use 2 small cloves garlic, cut in half, instead of the shallots.
