Tomatoes & Basil Dressing
Celebrate the long, wonderful days of summer with a special salad of vine-ripe tomatoes topped with a fragrant dressing of basil and shallots.

Ingredients
- 2 large shallots, finely chopped
- 1/2 cup finely chopped fresh basil
- 5 tablespoons extra virgin olive oil
- 3 tablespoons balsamic vinegar
- 2 tablespoons sesame oil
- 1/2 teaspoon salt
- 1/2 teaspoon salt
- 1/8 teaspoon white pepper
- 4 large leaves green leaf lettuce
- 4 medium tomatoes, sliced
Directions
Combine shallots, basil, olive oil, vinegar, sesame oil, salt and white pepper in a jar with a tight-fitting lid. Shake to mix.
Let dressing stand for 10 minutes. Shake again.
Line each of 4 salad plates with a lettuce leaf. Arrange equal portions of tomato slices on each plate.
Drizzle basil dressing over the salads. Serve immediately.
variation For a milder flavor that lets the basil taste come through, use 2 small cloves garlic, cut in half, instead of the shallots.
