Wilted Spinach Salad

Wilted Spinach Salad

Here’s a simple salad with an old-fashioned dressing that is as welcome at parties as it is at home.

Ingredients

  • 4 slices bacon
  • 1/4 cup white-wine vinegar
  • 2 tablespoons water
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon black pepper
  • 1 (7-ounce) can mandarin oranges
  • 1 (10-ounce) package fresh baby spinach
  • 1 small red onion, thinly sliced

Directions

  1. For salad dressing, place bacon in a large skillet. Cook over medium-high heat, turning occasionally, until crisp. Transfer bacon with tongs or a slotted spatula to a paper-towel-lined plate to drain. Reserve bacon drippings in skillet.

  2. Add vinegar, water, sugar, salt and black pepper to bacon drippings in skillet. Cook mixture, stirring until heated through.

  3. For salad, drain the mandarin oranges. Combine the spinach, mandarin oranges and onion in a salad bowl and toss to mix.

  4. Pour salad dressing over the salad and toss to mix well. Crumble bacon and sprinkle on top of salad.

Secret Tip

To prepare the salad ahead of time, combine the salad ingredients in a bowl and mix well. Cover with plastic wrap and refrigerate. Prepare dressing; refrigerate in a covered jar or bowl. To serve, reheat dressing, pour over salad and sprinkle with crumbled bacon.
