Oven-Crisp Fish & Chips
Oven-frying the fish gives it a crisp coating without the mess of deep-frying.

Ingredients
- 1 pound cod fillets
- 1 cup ranch salad dressing
- 3/4 cup hush puppy mix or all-purpose breading
- 2 large eggs, beaten
- 2 cups crushed cornflakes
- 1 (32-ounce) package frozen French fries
- 1 (32-ounce) package frozen French fries
- 1/4 teaspoon Cajun seasoning
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Directions
Preheat oven to 400°F. Spray 2 baking sheets with butter- flavored nonstick cooking spray.
Cut fish into small pieces. Dip in salad dressing. Coat with hush puppy mix.
Dip the fish pieces in the eggs. Coat with the cornflakes. Arrange the fish on 1 prepared baking sheet.
Spray fish with butter- flavored nonstick cooking spray. Bake until the fish is golden and flakes easily with a fork, about 10 minutes.
Meanwhile, arrange French fries on the other prepared baking sheet and bake until golden, about 12 minutes. Sprinkle with Cajun seasoning, salt and black pepper. Serve immediately with fish. variation Try substituting catfish for the cod fillets and add 1 teaspoon Cajun seasoning to the cornflakes.
Secret Tip
For a fun way to serve this authentic and traditional British favorite, shake salt and just a little malt vinegar over the fries while they are still hot. Toss them to distribute salt and vinegar evenly.
