Salmon with Lime Butter
Nice enough for a romantic weekend dinner, Salmon with Lime Butter is also quick enough for an out-of-the-ordinary weeknight dinner.

Ingredients
- 4 tablespoons butter, softened
- 3/4 teaspoon grated lime zest
- 1 (1-pound) salmon fillet
- 3 tablespoons olive oil
- 1/2 teaspoon finely ground sea salt
- 2 tablespoons crushed green peppercorns
Directions
Preheat grill to medium.
Combine butter and lime zest in a small bowl and mix well. Chill, covered, until serving time.
Rub fillet with olive oil. Sprinkle with sea salt. Press peppercorns into fillet.
Arrange fillet skin side up on grill. Grill 8 inches from heat, turning fillet halfway through cooking, until fish flakes easily with a fork, about 4 to 5 minutes per side. Serve with lime butter.

For ease of serving, roll the butter into a log before refrigerating. This makes it simple to slice off the right amount, and the slices are uniform and attractive.
