Cheesy Olive Bites

Savory Cheddar pastry surrounds salty, tangy olives for a ?can’t-stop-eating appetizer.

Servings: makes 24 to 30 appetizers

Ingredients

  • 1 cup shredded Cheddar cheese
  • 4 tablespoons butter, softened
  • 1/2 teaspoon paprika
  • 3/4 cup all-purpose flour
  • 3/4 cup all-purpose flour
  • 24 to 30 pimiento-stuffed green olives

Directions

  1. Preheat oven to 400°F.

  2. Combine Cheddar, butter and paprika in a medium bowl and mix well.

  3. Add flour to Cheddar mixture and mix well. Shape into a ball.

  4. Shape dough by teaspoonfuls around each olive. Arrange in a baking pan.

  5. Bake until lightly browned, about 12 to 15 minutes.

Secret Tip

The cheese dough makes a fantastic crust for a quiche or even an apple pie. Simply pat it into a pie plate, pressing it up the side with your fingers. Or, to use it later, place the dough ball on a piece of plastic wrap. Fold the plastic wrap over it and slightly flatten into a disk. Chill until ready to use.
