Fresh Fruit Salsa

Fresh Fruit Salsa

This salsa is a fresh change from traditional sauces for topping grilled chicken or pork. It’s also a good accompaniment for tortilla chips, or instead of tomato salsa for quesadillas.

Servings: makes 5 cups
Prep Time: 19 minutes start to finish

Ingredients

  • 1 cup chopped mango
  • 1 cup chopped honeydew melon
  • 1 cup drained canned pineapple chunks
  • 2 kiwifruit, chopped
  • 1 cup chopped red bell pepper
  • 1/2 cup finely chopped red onion
  • 1/4 cup finely chopped fresh cilantro
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons lime juice
  • 1 teaspoon finely chopped jalapeño
  • 1/2 teaspoon salt
  • 1/8 teaspoon white pepper

Directions

  1. Combine mango, honeydew melon, pineapple, kiwifruit, bell pepper and onion in a large bowl and mix well.

  2. Mix cilantro, vinegar, lime juice and jalapeño in a small bowl.

  3. Stir cilantro mixture into mango mixture. Season with salt and white pepper. Chill, covered, until serving time.

Secret Tip

To chop a mango easily, peel the skin from one-half of it, then make several vertical slices and then several horizontal slices to cut the flesh into cubes. Then simply cut the cubes from the seed. Repeat with the other side.
