Ham-Wrapped Apricots

Fresh fruit with ham offers a delicious way to tempt ?appetites in advance of the main event.

Ingredients

  • 2 (15-ounce) cans apricot halves or 14 pitted fresh figs
  • 5 ounces crème de Brie with herbs or 8 ounces mascarpone cheese
  • 1 teaspoon finely chopped fresh rosemary
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon black pepper
  • 7 or 8 thin slices baked brown sugar ham, cut into 1/2-inch strips

Directions

  1. Preheat oven to 350°F.

  2. Drain apricots. Fill each apricot half with Brie. Sprinkle with equal portions of rosemary and black pepper.

  3. Wrap a piece of ham around each stuffed apricot half. Secure with a toothpick, if needed. Arrange filled side up on a nonstick baking sheet.

  4. Bake until cheese is melted, about 10 minutes.

Secret Tip

Because the quality of the ham determines the quality of the finished product in this recipe, buy the best grade of ham you can find. You may wish to seek out a European ham, such as Black Forest ham or prosciutto, which have unique flavors ideally suited to pairing with fruit.
