Broccoli Lasagna Roll-Ups
Each roll contains a complete meal-a protein, a starch and a vegetable-in an irresistibly attractive package.

Ingredients
- 1 tablespoon olive oil
- 1/2 teaspoon refrigerated minced garlic
- 1 (14 1/2-ounce) can tomato sauce with Italian seasonings
- 1/2 teaspoon oregano
- 6 lasagna noodles
- 12 ounces cottage cheese
- 1 (10-ounce) package frozen chopped broccoli, thawed and drained
- 1 cup frozen chopped onion
- 1 teaspoon garlic powder
- 1/2 cup grated Parmesan cheese
Directions
Heat olive oil in a medium skillet over medium-high heat. Sauté garlic in hot oil, stirring continually, for 2 minutes. Stir in tomato sauce and oregano. Cook over medium heat, stirring occasionally, for 7 minutes.
Meanwhile, cook the noodles using the package directions; drain.
Spread 1/2 cup tomato sauce mixture in a 12- x 8-inch baking dish.
Preheat oven to 375°F.
Combine cottage cheese, broccoli, onion and garlic powder in a large bowl and mix well. Spread equal portions of broccoli mixture over each noodle. Roll up noodles, jelly roll fashion, and arrange in prepared baking dish.
Spoon remaining tomato sauce mixture over roll-ups. Bake for 15 minutes. Sprinkle with Parmesan.
variation Substitute one 10-ounce package thawed frozen spinach for the broccoli. Be sure to squeeze any excess moisture from the spinach.
