Five-Cheese Pizza Bianco
Cheese-rich and studded with artichokes, mushrooms and basil, this pizza is a feast of tastes to savor. Keep it handy if your crowd includes someone who prefers a meatless pizza.

Ingredients
- 8 ounces mushrooms, sliced
- 3 ounces cream cheese, softened
- 1/4 cup low-fat cottage cheese
- 1/4 cup herbed Boursin cheese
- 1/4 cup shredded Parmesan cheese
- 1 (10-ounce) prepared pizza crust
- 1 (10-ounce) prepared pizza crust
- 1 (14-ounce) can artichoke hearts, drained and cut into quarters
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons chopped fresh basil
Directions
Preheat oven to 450°F.
Heat a large nonstick skillet over medium-high heat. Add mushrooms to hot skillet. Sauté, stirring continually, for 5 minutes. Remove from heat.
Combine cream cheese, cottage cheese, Boursin and Parmesan in a medium bowl and mix well.
Place pizza crust on a baking sheet. Spread cream cheese mixture over crust to within 1/2 inch of edge.
Top pizza with artichokes and mushrooms. Sprinkle with mozzarella. Bake until crust is crisp, about 12 minutes. Sprinkle with basil. Cut into 8 wedges and serve.
Secret Tip
Chop basil the easy way. Stack several washed basil leaves, then roll them into a cylinder like a cigar. Cut off thin slices as if you were cutting a roll of cookie dough. You'll have perfect shreds of basil. If you want them smaller, chop through the pile of shreds once or twice.
