Pasta Fagioli Salad

This salad uses the flavors of Italy’s Pasta Fagioli-a delicious combination of beans, tomatoes and pasta that’s ready in minutes.

Ingredients

  • 8 ounces macaroni
  • 1 (15-ounce) can red kidney beans
  • 1 (15-ounce) can Great Northern beans
  • 1 (14 1/2-ounce) can Italian-style diced tomatoes
  • 1 cup chopped carrots
  • 1 cup chopped green bell pepper
  • 2/3 cup Italian salad dressing
  • 1/2 cup shredded Parmesan cheese

Directions

  1. Cook pasta using package directions; drain.

  2. Drain kidney beans, Great Northern beans and tomatoes.

  3. Combine pasta, beans, tomatoes, carrots, bell pepper, salad dressing and Parmesan in a large bowl and toss to mix. Serve immediately.

Secret Tip

Here's an easy fix to add a fresh taste to canned beans. Drain the beans and rinse well. Combine the beans and enough apple cider vinegar or white vinegar to cover. Let stand while you ­prepare the rest of the salad. Drain the beans and add to the salad.
