Pasta Fagioli Salad
This salad uses the flavors of Italy’s Pasta Fagioli-a delicious combination of beans, tomatoes and pasta that’s ready in minutes.

Ingredients
- 8 ounces macaroni
- 1 (15-ounce) can red kidney beans
- 1 (15-ounce) can Great Northern beans
- 1 (14 1/2-ounce) can Italian-style diced tomatoes
- 1 cup chopped carrots
- 1 cup chopped green bell pepper
- 2/3 cup Italian salad dressing
- 1/2 cup shredded Parmesan cheese
Directions
Cook pasta using package directions; drain.
Drain kidney beans, Great Northern beans and tomatoes.
Combine pasta, beans, tomatoes, carrots, bell pepper, salad dressing and Parmesan in a large bowl and toss to mix. Serve immediately.
Secret Tip
Here's an easy fix to add a fresh taste to canned beans. Drain the beans and rinse well. Combine the beans and enough apple cider vinegar or white vinegar to cover. Let stand while you prepare the rest of the salad. Drain the beans and add to the salad.
