Tomato Bacon Spirals

Some recipes make the most impact with simple flavors. Here, smoky bacon, sweet tomato and tender mushrooms create a dish that has as much appeal as fancier fare.

Ingredients

  • 16 ounces rotini
  • 1 pound smoked bacon, chopped
  • 16 ounces fresh mushrooms, sliced
  • 1 cup frozen chopped onion
  • 1 tablespoon refrigerated minced garlic
  • 2 (14 1/2-ounce) cans diced tomatoes
  • 2 teaspoons dried basil
  • 1/2 cup shredded Parmesan cheese

Directions

  1. Cook pasta using package directions; drain. Keep warm.

  2. Fry bacon in a large skillet until browned and crisp. Drain, reserving 1 tablespoon skillet drippings.

  3. Sauté mushrooms, onion and garlic in skillet drippings, stirring continually, until tender, about 6 minutes.

  4. Add undrained tomatoes and basil and mix well. Bring to a simmer, stirring occasionally.

  5. Combine pasta, tomato mixture and bacon in a serving dish and toss to mix. Sprinkle with Parmesan. Serve immediately.

Secret Tip

If you're only serving 4 to 6 people, prepare the recipe as directed, using only one can of tomatoes. You'll get a concentrated bacon flavor. Reduce the amount of pasta to 10 to 12 ounces.
