Tortellini Vegetable Toss

Here’s a meatless one-dish meal that uses convenience products for speed but has a fresh taste.

Ingredients

  • 3 teaspoons chicken bouillon granules
  • 12 ounces fresh cheese tortellini
  • 1 (16-ounce) package frozen mixed vegetables with broccoli
  • 1/4 cup olive oil
  • 1 teaspoon refrigerated minced garlic
  • 1/4 cup grated Parmesan cheese
  • 2 teaspoons chopped fresh basil, optional
  • Cracked black pepper to taste

Directions

  1. Bring 2 quarts water and bouillon granules to a boil in a large saucepan. Add pasta. Cook for 4 minutes.

  2. Add mixed vegetables to pasta mixture and mix well. Cook for 6 minutes; drain, reserving 1 cup liquid.

  3. Heat olive oil in a large skillet over medium-high heat. Sauté garlic in hot oil for 1 minute. Add pasta mixture and reserved liquid.

  4. Cook, stirring gently, for 1 minute. Transfer to a serving dish. Sprinkle with Parmesan, basil and black pepper.

Secret Tip

To dress up this dish, give it a velvety coat of cream. Add 1/3 cup heavy cream to the tortellini and vegetables as they sauté with the garlic. You'll enjoy the way the cream pairs with the garlic.
