Carolina Barbecued Chicken
Nothing could be finer than a Carolina barbecue sauce. You’ll surely sing the praises of this tangy version.

Ingredients
- 2 tablespoons vegetable oil
- 8 chicken thighs
- 1 cup frozen lemonade concentrate, thawed
- 1 medium onion, finely chopped
- 1 medium green bell pepper, finely chopped
- 1 cup ketchup
- 8 tablespoons (1 stick) butter, melted
- 8 tablespoons (1 stick) butter, melted
- 3 tablespoons apple cider vinegar
- 1 teaspoon hot pepper sauce
- 1 teaspoon garlic powder
- 1/2 teaspoon cayenne pepper
Directions
Preheat grill. Heat vegetable oil in a large skillet over medium heat. Add chicken. Cook until chicken is browned, about 3 minutes per side. Remove skillet from heat.
Combine lemonade concentrate, onion and bell pepper in a medium saucepan. Stir in ketchup and butter. Stir in vinegar, hot pepper sauce, garlic powder and cayenne pepper.
Season sauce with salt to taste. Bring to a boil; reduce heat to medium-low. Cook, stirring frequently, until slightly thickened, about 5 minutes. Reserve half the sauce. Place chicken on grill; baste with remaining sauce.
Grill chicken 6 inches from heat, turning and basting with sauce frequently, until cooked through, about 10 minutes. Serve reserved sauce with chicken.
Secret Tip
Frozen lemonade concentrate is easily thawed by placing it in the refrigerator the night before you plan to use it. Or, simply run warm water over the can for 3 to 4 minutes for a fast thaw.
