Sour Cream Chicken

Ingredients

  • 8 to 12 chicken tenders
  • 1 envelope ranch dressing mix
  • 1 (10 3/4-ounce) can cream of mushroom soup
  • 1 cup sour cream
  • 2/3 cup shredded Cheddar cheese
  • 1 (2.8-ounce) can French-fried onions

Directions

  1. Preheat oven to 350°F.

  2. Arrange chicken in a single layer in a shallow microwave-safe baking dish. Sprinkle with dressing mix.

  3. Combine soup and sour cream in a small bowl and mix well. Spread over chicken. Sprinkle with Cheddar.

  4. Cover with plastic wrap. Microwave on HIGH for 8 minutes. Remove and discard plastic wrap. Sprinkle with French-fried onions. Bake in oven until chicken is cooked through, about 10 to 12 minutes.

Secret Tip

Cook tomorrow night's dinner while you cook tonight's. Just double the recipe. The next night, remove and discard the onion topping and cut the chicken into small pieces (do not remove from sauce). Add 1/2 cup half-and-half and 1/2 cup thawed frozen peas to the chicken, heat in the micro­wave and serve over toast.
